Understanding Our Matcha

This matcha is sustainably grown and holds official JAS (Japanese Agricultural Standard) organic certification. We can’t yet label it “EU Organic” on our site because the final EU registration is still processing. JAS holds organic equivalence with the EU, meaning the farming standards are identical. You’re getting a cleanly cultivated, pesticide-free product, and only the European seal is pending.

On the processing side, there’s a common belief that stone-ground matcha is superior. In reality, traditional stone mills are inefficient and produce irregular particle sizes, and their appeal is mostly historical and used for marketing. Modern mechanical mills create a far more consistent particle size, giving a smoother blend that dissolves perfectly.

Cultivars

“Single cultivar” sounds exclusive, but the finest matcha is always a master blend. Relying on one variety leaves the flavor exposed to weather and seasonal shifts. Blending lets the tea master select the best leaves from each harvest to balance umami, aroma, and bitterness. The result is a more complex, well-rounded, and consistent brew every time.
